About this place
Steamed and slowly fermented with Tokachi pesticide-free azuki beans and solar salt, the Nagaoka-style enzyme brown rice yields a pleasantly springy chew and an understated, earthy savor with every bite. The shop’s fermented musubi lineup highlights that natural sweetness and deep cultured nuance in the unadorned Suppin, alongside textural variations such as wild perilla and hemp seeds tossed in cold-pressed sesame oil for a nutty crunch, or Tsuya Konbu, which pairs Rishiri kelp with Kyoto sansho pepper simmered into tsukudani.
Another signature is the Oinaru Inarisan, made by gently steeping additive-free, hand-fried tofu pouches in natural dashi broth before wrapping them around fermented brown rice or specially cultivated rice. Each bite blends the juicy savour of the pouch with the tender grain structure within. Partially milled rice stars in the charcoal-themed sumi-musubi series, with choices ranging from Zen Musubi, accented by the crisp tartness of Kishu pickled plum, to Hime Musubi, scented with spicy yuzu kosho and yuzu ponzu.
To round out a rice ball meal, the shop ladles warm Musubi no Otomojiru, a soothing broth built on kelp and vegetable dashi. The dessert selection includes the gluten-free Royal Terrine—folded with cage-free fertilized eggs and additive-free cream cheese for a semi-thawed, velvety melt—along with fresh smoothies prepared without refined white sugar, relying solely on ripe fruit for sweetness.
Tucked into a quiet residential pocket of Kamigyo Ward within walking distance of Kitano Tenmangu Shrine, the shop operates primarily for takeout, supplying light daily lunches and picnic provisions. Much of the menu accommodates vegetarian and vegan preferences. Because these thoughtfully prepared rice balls can sell out shortly past noon, arriving early or reserving ahead is the safest approach.
